Eggceptionally Healthier Eggnog
We're still managing to get our holiday workouts in when we can, but we're also enjoying the traditional festivities. Hope everyone is having a happy and healthy holiday season so far! Drink lots of water and take it easy on the eggnog, mama! And if you are going to over-indulge in the eggnog, try this healthier version:
2 cups almond milk
3 egg whites
1/3 cup honey
1 tsp vanilla
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
Place the ingredients in a blender and blend until consistency is smooth.
Pour the eggnog into a pot and warm over medium-low heat for 15 minutes to cook the egg. Do not boil. Continue to whisk to avoid a boil.
Remove from heat and when cooled, set the pot in the fridge overnight.
By the next morning the liquid should have thickened. Now blend with a whisk.
Add a bit more milk until you reach the consistency you enjoy if you find it was too thick in the morning.
Pour into pretty glasses, sprinkle with cinnamon and enjoy!
