Attention all you vegan moms!
I tried a pretty delicious chickpea pancake at Terroni's and now I'm testing some recipes for my vegan mommy clients!
Here's one that I am working on perfecting
1 cup of chickpea flour
1 cup ground chick peas
1 tsp salt
1/4 tsp baking soda
1/2 tsp tumeric
1/2 tsp ground coriander
1 tsp ground cumin
1 cup water
1/4 lemon juice
1-2 cups of chopped vegetables as desired
In a small bowl mix together the flour, salt, baking soda, and spices. Then add water and beat well. Beat in lemon juice with a fork and follow with adding in mixed veggies.
PS - don't taste the batter...raw chickpea flour doesn't taste so great!
Heat a regular pan with a bit of oil over medium low heat. Ladle 1/2 cup batter into the pan. Cook until the bottom is browned and then flip to other side.
Repeat with the rest of the batter.
