Mother’s Day Peanut Butter Cookies

On Mother’s Day we plan to skip our regular workout and get active in the kitchen instead. There is truly something special about spending time baking together that just completes this occasion.

My daughter is a big peanut butter fan, so her pick for a Mother’s Day treat had to include her favourite Planter's peanut butter of course. We debated on brownies, cupcakes and even nut butter bark, but peanut butter cookies came out on top as she loves to get her clean hands dirty with rolling the dough into cookie balls. There are so many great recipes out there, but I wanted to share a healthier take on the traditional peanut butter cookie. Plus, if your kitchen’s anything like ours, we always have some Planter’s peanut butter in the pantry, so this is a great recipe to bring out any day, to keep the baking memories going. This recipe is easy and yummy, so get the kids involved and you can all enjoy it as a Mother’s Day treat! Plus, you’ll have lots of extra to last the week!

Mother’s Day Peanut Butter Cookies


2 cup whole wheat flour

1 tbsp. coconut oil

1 ¼ tsp baking powder

1 cup coconut sugar

2 egg whites

2 tsp. organic vanilla extract

10 tsp. creamy Planters peanut butter

24-48 Planters peanuts (optional for topping)


1.     Preheat the oven to 350 degrees F and line your baking sheet with parchment paper.

2.     In one bowl, mix together the flour and baking powder. In a second bowl, whisk together the coconut oil, egg whites and vanilla. Stir in the peanut butter until mixed well. Add in the sugar followed by flour mixture. Note: if your dough appears too dry, add milk one tbsp. at a time until it is appropriate consistency.

3.     Make sure the kiddies hands are washed and clean; now let them go to town by rolling the dough into 24 balls. Place them onto your baking sheet. Flatten with a fork to your desired thickness. Optional: add 1-2 peanuts on each cookie for an added crunch).

4.     Bake for 9-11 minutes. Cool and place on wire rack.

That’s it!

I’m telling you – these cookies taste just like the traditional peanut butter cookie recipes, but rest assured these are a little more on the healthy side with using coconut oil and coconut sugar! Plus, you'll be surprised at how soft and chewy they are. The delicious cookies aside, there is nothing more fulfilling than watching my daughter bake and have fun in the kitchen. It makes for a perfect activity on Mother’s Day and after mommy enjoys a couple of cookies, I may have to just sneak away for some time at the spa!
