Yummy & Healthy Protein Brownie

This soft and chewy brownie is my absolute favourite. I decided to share this recipe because I find it easy to prepare, and my girls LOVE its taste. And the best part about them? They are flourless, gluten-free, and packed with protein! Yum! Try making these brownies with the family for Mother’s Day to enjoy together or let your little ones take the lead and make this super-easy-to-prepare brownies for you!

To prepare the brownie, you will need:

  • 3/4 cup chocolate whey protein

  • 1/3 cup unsweetened cocoa powder

  • 1/2 cup granular sugar substitute

  • 1 tsp baking powder

  • 1/3 tsp salt

  • 5/8 cup canned pumpkin

  • 1/2 cup brown sugar substitute

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1/2 cup creamy peanut butter

  • 3/8 cup semi-sweet chocolate chips

  • 1/4 cup sugar-free syrup

How to make the brownie:

  1. Preheat your oven to 350°F

  2. Mix together your eggs, vanilla extract, brown sugar, peanut butter, maple syrup, and canned pumpkin.

  3. In a separate bowl, combine the cocoa powder, chocolate whey protein, sugar, baking powder, and salt, and mix well.

  4. Slowly add your dry ingredients into your wet ingredients a little bit at a time while mixing until you have a nice smooth batter.

  5. In a small bowl, at your chocolate chips. Microwave for about a minute, or long enough to melt the chocolate. Add the melted chocolate to your batter and mix it in.

  6. Generously spray an 8x8 baking dish with cooking spray and pour your batter in. Add to the oven and bake for 30 minutes.

  7. Let cool for about 20-30 minutes to allow the brownies to fully set and enjoy!
