Mother's Day Protein Waffles

It’s Mother’s Day this weekend and although we should be celebrating mamas all year round, it is nice to make this one day extra special!! My wish every year since having children was never anything fancy. Breakfast in bed is always nice, but just spending quality time with my family all day is all I really ask for!

For this month’s So Yummy Mommy recipe, Sabrina and I wanted to take traditional waffles up a notch. Both of us love Kaizen Naturals vegan protein powder, so we decided to make your everyday waffle a protein waffle instead. They came out fluffy, tasty and of course, packed with protein!

Sabrina was the brains behind this recipe and found the perfect combination for all the ingredients with the right balance of Kaizen Natural’s Vanilla Vegan Protein. These waffles are mouth-watering and they do not have to be saved just for mother’s day. In fact, I’ve had them the past couple of weekends! Ingredients

  • 2 Scoops Kaizen Naturals Vegan Vanilla Protein

  • 2 Tbps coconut flour

  • 1 Tsp baking powder

  • 3 Tbsp coconut sugar

  • 2 eggs

  • 1/2 cup almond milk or another nut milk 

  • 1/2 tsp vanilla extract 

Instructions

  1. Preheat a waffle iron.

  2. In a medium bowl, mix together the protein powder, coconut flour, baking powder, and coconut sugar.

  3. Add the eggs, almond milk and vanilla extract to the dry mixture; stir until thoroughly combined and batter forms.

  4. Place ¼ cup batter into each well of the waffle iron. 

  5. Cook for 4 minutes or until golden brown.

Enjoy with the toppings of your choice and drizzle on maple syrup to finish it off! This is guarateed to put a smile on any mother’s face. I know I loved every bite!
